Lamb Casserole

This is todays recipe in the never ending quest for delicious homemade food for Lacey who is 13 months old.

325gm lamb fillet, sliced thinly
1 medium tomato, diced
1/4 cup frozen peas
1/4 cup frozen corn
1 medium potato, peeled & diced
1 cup cooked brown rice
2 cups vegetable stock

Brown lamb in medium fry pan with olive oil, add tomato and saute for approx. 5 minutes. In a medium saucepan simmer frozen peas and corn together with potato until just cooked. Combine all ingredients in a medium casserole dish and stir well. Bake @ 160 degrees (fan forced electric oven) for approx. 45 minutes - 1 hour.

Allow to cool and mash.
