I was going to make banana muffins but I had left the bananas a little too long so had to come up with something different. I went with a savoury muffin instead.
Capsicum muffins
Ingredients
1/2 medium red capsicum, diced
1 small onion, diced
Mixed herbs
2 cups self raising flour
Pinch of salt
Parmesan cheese, grated
2 eggs
1/2-3/4 cup of milk
2 Tbs melted butter
Method
Fry onion, capsicum and mixed herbs in small fry pan and set aside. Sift four into medium bowl and gently stir through salt and cheese. Mix through egg, milk and butter. Add fried ingredients and mix well. Spoon mixture into muffin tin and bake @ 160 degrees (fan forced) for 20mins or until golden brown.
*As we are currently on a healthy eating streak I used olive oil spray to fry, nuttelex instead of butter and low fat milk.

Prawn, mango and avacado salad
This a favorite of ours, especially living in a coastal town and prawns are so fresh!
700gm cooked, peeled prawns
1 large mango
2 medium avocados, peeled and sliced
1 small red capsicum, thinly sliced
3 shallots, finely diced
2 large handfuls baby spinach
1 medium cos lettuce, sliced
Dressing:
3 Tbls olive oil
1 Tbls lemon or lime juice
1/2 Tbls sweet chili sauce
Pinch of pepper
I combine everything bar the prawns in a large salad bowl and gently toss. I then serve onto plates and place prawns on top and drizzle dressing over the salad.
*This pic was taken before the dressing was on and once it was, it was too yummy to stop and take another.

The road to fitness starts here...
So James and I have decided to stop talking about getting fit and losing weight and actually do it. I think the turning point for me was just before Christmas when I was wearing a dress that I thought looked great and in the space of fifteen minutes three people had asked me if I was pregnant. I have re friended Wii Active and am actually really satisfied with my results so far. I love the muscle burn and am happy to say the satisfaction of the burn getting less and less over the days is great. I also love that I am beating my workout goals every day and can already see results after only a week. Jame has started Aldi meal replacement sachets and after tasting a couple of the soups and shakes I can definitely say that they are not only really tasty but very filling as well, I will be starting in the coming week. I really only want to lose 4-5kg, it's more about toning my bum and thighs and trying to lose my muffin top and getting generally fit.
So this is it, I have set my mind to a specific goal and I fully intend to not only reach that goal but to surpass it!

New family member
Just a quick one today as it is already late (it's not really that late but I am getting old so it certainly feels late), and I am dying to go to bed.
We have been talking about adding to the pet side of our family for a while now and finally decided on a guinea pig as we aren't allowed to keep rabbits in QLD. So today we went out to the recycle depot and found the most fantastic bargain, a gorgeous green guinea pig hutch that only had the smallest patch of rust (which we have covered) for only $5! With the hutch firmly secured to the roof bars we headed off to the pet shop and picked our new fur baby. His name is Felix (for now, he has already been through two other names so far) and his fur/hair(??) is salt and pepper with a white strip across his belly.
Lacey loves him but seems to think he is a puppy, sooo cute when she sits there calling for the puppy and doesn't understand why we keep saying "no baby, guinea" but I'm sure she will get it eventually and for now it's gorgeous.
The older kids are wrapped and love they can do so much for him (especially Annabelle who thought it was great fun to sneak him her left over salad).
Anyway, short and sweet for tonight.
Love me!

First post WOOT!
Well I thought it high time I started blogging again and seeing as though I haven't touched my old blog in years and have since forgotten all details of said blog, I figured it was a good opportunity to start a new one.
It is school holidays here and a little crazier every day. I am trying to maintain some semblance of sanity whilst entertaining five kids and keeping the house in a somewhat clean (enough) state. Poor little Lacey is finding it all very tiring as she usually only gets about an hours sleep during the day before her noisy, irritating, fighting, yelling, screaming loving siblings wake her up. The older kids have been keeping relatively busy playing with Christmas presents, visiting friends and having the occasional movie marathon (we have been getting A LOT of rain).
On top of all the normal day to day activity I am also studying at USQ doing the Tertiary Preparation Program in the hopes of getting into Bachelor of Nursing next semester. The workload is not too bad, it's finding hallowed "quiet time" that is the struggle. My marks so far have been great in Maths (high distinctions), not as good in English though (but I am picky - they are still good marks). I am really enjoying studying but am also trying not to get to relaxed as this course is only a preview into real Uni life.
I have recently been on a quest to cook my own wholesome baby food for Lacey (that she will actually eat) and have found some really easy solutions. Every time I have used an actual recipes it has resulted in misery so now I am making up my own recipes and sometimes I even remember to write them down. I will be adding todays recipe for lamb casserole shortly.
Well this is just a short one for now but I will hopefully not forget about this blog and actually keep it up to date.
